“Do what you can, with what you have, where you are.”
Theodore Roosevelt, the line three brothers took to an orchard in North Salem
Alex, Kevin and Ben Covino came home from the University of Rhode Island with horticulture degrees, a family orchard and, Mother Nature willing, apples aplenty. Hardscrabble is what they made of it: a micro farm-cidery where every step, from tree to glass, happens on the farm.
Our storyFour ciders of our own, four guest beers poured for the farm. Pull a tap to pour one.

Growing, picking, cleaning, pressing, fermenting, bottling. Nothing leaves the farm until it’s in a bottle, and most of it never leaves at all.

01 · Grow
01Ten apple varieties grow on the hillside at Harvest Moon, the family's orchard since 2011. The brothers planted thousands of apple whips to make room for more.
02Every apple is picked by hand on the farm, then washed and sorted right here before it goes anywhere near the press.
03The juice is pressed from a blend of all ten varieties. Fermentation is monitored closely, tank by tank.
04Filtered several times for the cleanest, freshest taste, then hand-bottled, capped and batch-pasteurised for stability.
05No distributor, no warehouse: from the cidery on the farm to the taproom bar on the same farm, and into your glass.
