Hardscrabble Cider

Three brothersand ten kinds of apple

Farmers, scientists and businessmen all round, the Covino brothers took their cue from a local hero, Theodore Roosevelt: do what you can, with what you have, where you are. What they had was an orchard.

How it happened

  1. Early 2011

    An orchard in the family

The Covino family, with a history in commercial tree farming, takes on Harvest Moon Farm and Orchard on Hardscrabble Road in North Salem.

  2. 2011 →

    Three horticulturists

Alex, Kevin and Ben, fresh out of the University of Rhode Island with horticulture degrees, start revamping the farm: thousands of apple whips go in and the rows are consolidated for more growing space.

  3. Summer 2015

    The first pressing

Hard cider becomes the farm's newest venture. Hardscrabble puts the Brothers Covino on the New York craft cider map.

  4. Today

    A taproom on the farm

Four house ciders on draft, a taproom open every day, Cider Nights on summer Fridays and cocktails made with New York spirits.

Farm to bottlethe epitome of hand-crafted

Every stage happens on the farm. The cider is pressed from a blend of all ten varieties, fermentation is watched closely, and it’s filtered several times for the cleanest, freshest taste before being hand-bottled, capped and batch-pasteurised.

  1. 01

    Grow

Ten apple varieties grow on the hillside at Harvest Moon, the family's orchard since 2011. The brothers planted thousands of apple whips to make room for more.

  2. 02

    Pick & clean

Every apple is picked by hand on the farm, then washed and sorted right here before it goes anywhere near the press.

  3. 03

    Press & ferment

The juice is pressed from a blend of all ten varieties. Fermentation is monitored closely, tank by tank.

  4. 04

    Filter & bottle

Filtered several times for the cleanest, freshest taste, then hand-bottled, capped and batch-pasteurised for stability.

  5. 05

    Pour

No distributor, no warehouse: from the cidery on the farm to the taproom bar on the same farm, and into your glass.

The orchardhow the apples are grown

Vegetables at Harvest Moon are grown with Integrated Pest Management: organic fertilisers and pest controls wherever possible, and every fruit and vegetable is planted and harvested by hand.

Northeastern apples are extremely susceptible to pests and fungi that could wipe out a crop, so the trees are sprayed, with the most environmentally conscious products available.
